San Choy Bow
Ingredients
3 finely chopped onions
2 tsp grated ginger
200 g firm bean curd (tofu)
1/3 cup chopped water chestnuts
2 tbsp chopped bamboo shoots
1/2 stick of finely chopped celery
1 tbsp light soy sauce
1/2 tbsp oyster sauce
18 lettuce leaves
Method
1. Fry onion and ginger in pan, and cook over low heat until they are soft.
2. Add water chestnuts, bamboo shoots, and celery, and cook for two minutes.
3. Gently fold through chopped bean curd.
4. Stir in sauces, and cook until the mixture has reduced.
5. Spoon the filling into leaves to serve.
