Spicy Beef and Pork Noodles
Ingredients
450 g Vietnamese ham
6 stalks of crushed and sliced lemongrass
100 g boneless sirloin
100 g boneless pork loin
450 g Vietnamese rice noodles>
Seasoning
2 tbsp fish sauce
1 tbsp chili paste
1 tsp sugar
1 tsp sea salt
2 tsp shrimp paste
1 tsp black pepper
Method
1. Add ham and lemongrass to boiling water.
2. Reduce heat and simmer for 1.5 hours.
3. Skim off any fat and strain the broth.
4. Stir the shrimp paste in 1/4 cup of cold water and set aside.
5. Add the shrimp paste solution and seasoning to the sirloin and pork loin.
6. Simmer the broth with the meat for 10-15 minutes or until the meat is cooked.
7. Slice the meat into small pieces to serve with cooked noodles. Add bean sprouts, herbs, chili or lime juice if desired.
